If you are an avocado lover, then you will probably love this stuffed avocado & Ayurvedic spices dish. I really enjoyed making this delicious meal, with so much flavour and colourful vegetables. It is very easy to prepare and cook, but take your time with it. In Ayurveda, the process of preparing the food and cooking is just as important as the final result. According to Ayurveda, the way we make our food determines how the food will be digested. So take your time preparing all the vegetables, enjoy the aromatic scents of the spices and have a grateful heart for all the fresh food you are about to nourish your body with.
Avocado is quite a heavy fruit, but of course it provides many benefits. It is high in healthy fats, vitamins, potassium and it's also very filling. The heavy quality of avocado makes it a nourishing and comforting food to have. Being heavy however, it increases Kapha dosha, but this does not mean you cannot enjoy it. Ayurveda is about balance, so you can have it but in moderation. Avocado is suitable for those who have Vata predominant dosha because it is oily and heavy, so it can balance out the dry and light qualities of Vata. This is a great dish for Vata and Pitta predominant dosha individuals. If you are more Kapha and feel in balance with your digestion, you can enjoy this in moderation. If however there is currently an imbalance in Kapha and digestion is very slow, enjoy the filling without the avocado to not aggravate the Kapha even more. The filling is honestly so delicious.
The recipe below makes 2 portions (1/2 avocado per serve)
1 large avocado (the mixture will be plenty so it also suits 2 (so 4 halves filling)
1 large Celery stick
2 mugs of Quinoa
5 cherry toms
1/2 spring onion
3 garlic cloves
1/2 red pepper
2 cups of cilantro
2 cups of spinach
2 tbsp Cumin
1 tbsp Turmeric
1/2 tbsp Black pepper
2 tbsp Coriander seeds
2 cups of Cilantro
1. Start by boiling the quinoa.
2. Dice all the ingredients in small pieces (be gentle to the food as always :)
3. In a large heated frying pan, add the oil ad then the spices first. Let them cook for about 1-2 minutes.
4. Add the vegetables and mix everything together. You will smell the delicious aroma of all the vegetables and spices together.
5. Cook them at medium heat and continue to stir frequently so that all the flavour is absorbed fully.
6. When the quinoa is done, add it to the mixture in the pan and stir everything together. Turn the heat to low and continue to stir for a few minutes. (You might need to add a little bit of extra oil at this stage)
7. Take off the avocado skin gently and cut it into half.
8. Once the quinoa and vegetables are ready, fill the avocado halves with the mixture and also add extra quinoa on the side of the stuffed avocado.
And you are ready to enjoy it. I really loved this meal. Although avocado is heavy and quite solid, it was actually very soothing and comforting. I had one half with extra mixture on the side and it was enough. My tastes buds wanted to indulge more because it is so good, but as the Ayurvedic saying goes, "eat only until you are full". The mixture is actually plenty so you can choose to have 1 full avocado per serving or half. And if you are making it only for yourself and have left overs, you can enjoy it for the next day. Even though ideally we should always prepare the food fresh, we should not waste any food .
