Nourishing mung bean salad
This delicious and nourishin mung bean salad makes a perfect and healthy lunch or dinner meal. It is gluten-free, vegan and very quick to make.
Green gram is a tasty legume part of the mung bean family often used in Ayurvedic dishes. Known for its high protein and fibre content, green gram is also easy to digest and nourishing to the digestive organs.

Ingredients:
2 standard mugs of cooked green gram
3 cauliflower florets (steamed)
3 broccoli florets (steamed)
1 Spring onion
5 cherry tomatoes
1/2 avocado (diced)
1/4 cucumber (diced)
1/2 lime
Olive oil
Basil
Himalayan salt
Black pepper​

Is this recipe for one serving or more? Do you mean 3 whole heads of broccoli and cauliflower or three flowerets? A little confusing sine only one spring onion.

Dear Elizabeth, thank you for your questions. It is 3 broccoli heads & 3 cauliflower heads which you can cut further into florets to make them thinner. This makes quite a large and abundant salad so it can be for two servings :)
