Get ready to indulge in a bowl of rich flavours and goodness. This delicious gluten-free and vegan noodles coconut curry dish with vegetables and Ayurvedic spices is so wholesome and comforting. The mix of Ayurvedic spices provides this dish an abundant aroma. The creaminess from the coconut cream feels so nourishing for the intestines and it gives the dish a rich flavour that will keep the belly full and happy without feeling heavy. It is actually more like a delicious curry soup.
Gluten-free thin rice noodles
1/2 can of Coconut cream
3-4 thinly cut broccoli heads
1 large diced carrot
1/2 large diced zucchini
1 Spring onion
1/2 tsp of Black pepper
1 tbsp Turmeric
1 tbsp Coriander seeds
3 grated or diced garlic heads
fresh ginger diced or grated
1. In a pot or large frying pan add olive oil then add all the spices together. Let them cook for about 1-2mins.
2. Add the vegetables and stir everything together well.
3. Add about 500ml of water and let everything simmer.
4. Add the coconut cream and stir everything together then let it simmer on low heat for about 10minutes.
